Garda extra virgin olive oil: a green treasure

Lake Garda is the northernmost point in the world where olives are grown, thanks to an extraordinary microclimate that allows the growth of plants that normally thrive hundreds of kilometers further south. Garda DOP extra virgin olive oil is an Italian excellence recognized internationally for its delicacy and aromatic complexity.

Why Garda

The lake functions as a huge thermal flywheel: it absorbs heat in summer and slowly releases it in winter, protecting the olive groves from frost. The surrounding mountains shelter them from the cold northern winds. The result is a Mediterranean microclimate embedded in the Alps, where olive trees grow up to 400 meters above sea level-a record for these latitudes.

Garda’s olive-growing tradition dates back to Roman times: the patricians of Verona and Brescia already appreciated this delicate and aromatic oil. Today, olive groves cover about 15,000 hectares on the hills surrounding the lake.

The varieties

Casaliva

The main cultivar of Brescian Garda: produces a sweet oil with notes of almond and freshly cut grass. It is the basis of the best DOP oils from the western shore.

Grignano

Typical of the Veronese shore, it gives a medium fruity oil with hints of artichoke and green tomato. Slightly spicier than Casaliva.

Frantoio and Leccino

Tuscan varieties adapted to Garda add complexity and structure to the blends. Frantoio brings herbaceous notes, Leccino sweetness.

Where to go for a tasting

Garda oil mills are generally open for tours and tastings:

  • Brescian shore: mills between Salò, Gardone and Toscolano-Maderno produce excellent Casaliva oils
  • Veronese shore: the area between Bardolino, Cisano and Garda is dotted with oil mills offering tastings often paired with local wines
  • Upper Lake: Limone and Riva olive groves produce oils with unique alpine character

How to recognize good Garda oil

Garda DOP oil is distinguished by:

  • Color: green with golden highlights
  • Scent: notes of almond, fresh grass, artichoke
  • Taste: sweet on entry, slightly bitter and spicy on the finish
  • Fluidity: lighter than southern oils, perfect for delicate dishes

Always look for the PDO marking on the bottle and prefer mills that indicate the harvest date-the best oil is that of the current year.

The collection

The olive harvest at Garda takes place between October and December. It is a magical time: the hills come alive with pickers with nets spread out under the trees, the scent of freshly pressed olives fills the air, and olive presses work day and night to transform the olives into fresh oil. Some mills offer participatory harvesting experiences-a unique way to experience this age-old tradition.

In the kitchen

Garda oil is perfect raw on lake fish, salads and bruschetta. Its delicacy makes it ideal for dishes where the oil should enhance rather than cover the ingredients. Try a drizzle of new oil on a slice of warm bread with a pinch of salt-the simplicity that reveals excellence.
